Ingredients

- 8 corn tortillas
- 1¼ cups shredded sharp cheddar cheese

- 1 cup diced onions
- 1 cup diced bell peppers
- 1 cup diced tomatoes
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Cooking Instructions

- In a large skillet, heat the olive oil over medium heat.
- Add the diced onions and bell peppers, sautéing until they are soft and translucent.
- Add the minced garlic, ground cumin, and chili powder, cooking for an additional 2 minutes until fragrant.
